Spéciale

Speciale is the Belgian variety of an English way of brewing beer. High fermentation amber ales. Slightly malty and slightly bitter taste. Alcohol percentage of around  5%.

Saison

Originally, this was a tartish fruit beer, brewed in winter to quench the thirst of the field workers in the next summer. Nowadays, Saisons are produced all year and can be quite sweet. Alcohol percentage of around 6%.

These beers cannot be classified into specific categories. They are unique both in flavour and in quality.

Gueuze Lambik

The bottled blend of old Lambik (beer of natural fermentation)  with young Lambik. The latter still contains residual sugar, which allows the fermentation to continue and carbon dioxide to be created. Depending on the brewery, its taste can vary from slighlty sweet to sour. However, there is always a definite taste of wheat.

Old Brown

Reddish brown beer ranging from sourish to sharp sweet taste. Beer of high fermentation which undergoes a very low seasoning in which a lactic bacterium infection is deliberatly started. Alcohol percentage is around 5%.

Wheat beers

Wheat beer is a beer of high fermentation and is not filtered during production, which explains its cloudy colour. Its typical flavour is created using  wheat malt (+35%) and herbs (curaçao, coriander and sea weed). The alcohol percentage is about  5%.

Scotch

Heavy, dark brown beer of high fermentation. Lightly sweet or sweet taste with a touch of caramel. Characterized by slightly bitter taste and aftertaste.

Stout

Originally a beer with a rather heavy. It tastes a little burned and very bitter.

Ale

Originally, a quite heavy beer with  a roasted and very bitter taste.

Trappist beers

Does not specify a category, but is a registered name for beer brewed in an abbey. There are still 5 abbeys brewing their own beer. However, the Trappist beers of West-Vleteren are not commercialized.

Abbey beers

Similar to Trappist beer, but not brewn in an abbey.

Barley wine

Very heavy beer of high fermentation. Colour ranges from golden to dark brown.
